All my nativities are now out. I have tried again and again to count them, but the number is never the same. Let´s say they are about a hundred. Or something like that. Last year I had a nativity exhibition open two days during advent. This year I have no spesific opening date, but The House in the Woods is open whenever we are at home, and people are welcome to come and have a look at the cribs.
I made an event on facebook, telling about the possibility to come and see, and there I also wrote that I would serve te/coffee and some special nativity cakes. It was not until after I had posted the event that I remembered that I have no nativity cake recipe. Neither have I ever hear of cakes with that name. Well, then I had to design some myself, and today the Nativity Cake Recipe was born.
Cupcakes, filled with dates and figs.
Nativity Cupcakes
4 eggs, 4dl sugar, 250g melted butter, 2dl milk, 8 dl white flour, 2 teaspoons baking powder, figs and dates.
Mix egg and sugar. Add melted butter and milk. Dice the figs and dates and add a little flour to them to make them less sticky. Add flour, baking powder and the fruit. Stir.
Fill the cupcake molds.
Bake in oven, 190C for about 20 minutes.
I have filled a huge Christmas tin now and put them all in the freezer. Easy to warm up when people come to see the nativities.
