Two cabin days in the bright Nordic sun. A bbq. A salad sprinkled with herbs from the cabin garden.
Cut a green salat (lettuce), add small tomatoes cut in half. Fry pine nuts in extra virgin olive oil and add some sweet honey (mine is from Mostar in Bosnia). Walk barefoot out in the cabin garden to cut lemon melissa and mint. Add salt and olive oil.
Let the salad rest while you marinate the meat.....
....extra virgin olive oil, white wine, lemon, garlic, salt, pepper.....and again a visit to the herb garden......rosemary and thyme. Rest in fridge for a couple of hours.

....and soon it is time for lunch for two. Among the roses.

While writing this post I couldn't for my life remember the name of the pine nuts, the English name I mean. I knew I had used them in recipes in the old food blog The Blue Cafe, and soon found myself looking through all my old posts there. What a joy to see them again. To remember.
It is too bad the blog is not alive any more, I said to myself, but then I got an idea - why not repost some of the old posts here.
So here is one with pine nuts :-) I hope you like this idea of reposting. By the way, this one is from August 2007.

Cabin time means time for friends. And this week-end was no exeption. Saturday afternoon friends were coming for coffee and I spent a nice hour in the primitive kitchen preparing sweets for us. A friend of Marta spent the week-end with us, and since she is intolerant to milk, it was a special challenge to decide what to eat. Another challenge which is connected to cabin life is that we don't have electricity and we don't have an oven.

I made waffles with lactose reduced milk, and as a special treat for us all I made a huge bowl of fruit salad sweetened with pine nuts fried in miele di limone/lemon honey. Easy to make, and oh so yummy.
When the guests came it didn't take long to empty the bowl.
