With Ingrid still in Italy and Marta away celebrating a birthday, the afternoon suddenly lay empty ahead of us. "I am going to cook us a special dinner" I said to Terje. "Perfect, and let's invite friends" Terje replied. And so we did.
My cooking is inspired both by the French and the Italian kitchen these days, and for a started I made a panzanella salad. It is so easy to make, you can make it several hours before the guests come and keep it in the fridge, and it tastes delicious. My recipe is originally from Tuscany, but I guess there are several from different parts of Italy.
For the main course we had meat and a cold potato salad, and a flower salad from my garden, topped with French cheese bought in Copenhagen Tuesday morning and sprinkled with olive oil. I love this time of the year when salads can be coloured with a garden flower palette, like these blue borago and yellow calendula.
For dessert I tried a new pie recipe, with raspberries. Mmm, topped with vanilla ice cream it tasted heavenly.
After all this food talk and laughter could flow easily for the rest of the night.
