Every year I travel to Italia. Once. Twice. May be even more. Evey time I come there I find new spaghetti dishes to try. Back home in The Blue Cafe I gather my notes, buy new ingredients and try our new recipes.....often from the memories of my taste buds only.
Today's spaghetti dish is not something I've eaten in Italia though, but after trying it I know I will look for it when I go back to Italia in May. As a matter of fact I found the recipe in our newspaper last week.....and have had water in my mouth, waiting to try it ever since I saw the photos and read the story behind. Pasta Alfredo, or pasta doppio burro.
Lars Lian and Ole Jacob Hoel, the two who have a weekly food section in our newspaper, write about chef Alfredo and his pregnant wife who didn't want anything to eat. In desperation Alfredo made this dish, so simple it is almost impossible to believe, and love could live on :-)
I've made the dish almost as described in the newspaper, but with my own little touch.

Pasta Alfredo The Blue Cafe way:
Cut 5-6 garlic feds, fry in a combination of salted butter and olive oil. I used two spoons of each. Add 3dl cream, salt and pepper, and let boil for a while, till the sauce gets a little thick - about 20 minutes.
Boil spaghetti, I used the more healthy whole grain type.
When finished add the sauce, sprinkle with fresh parmesan and pepper....
.....and oh, la la.......you are in for a feast.

An Italian pasta dish deserves Italian music. I have tickets for an opera performance at La Fenice in Venezia in May. Donizetti's Lucia di Lammermoor.
