With all this lovely sun tanning our skin, I felt a deep craving for filling my stomack with some of it as well. It had to be a vegetable soup for Sunday lunch. And it had to be one flavored from The Blue Garden.
The nettles are growing now. Terje weeded most of our garden yesterday, and I forgot to tell him to leave the nettles. Hi did a good job with the weeds, but luckily I managed to find some nettles under the berry bushes. I picked them with gloves on, but didn't manage to wash and cut with the gloves. Well, I guess getting burnt is part of the kitchen fun.
The chives and a few other herbs are growing, and while I was out in the vegetable garden I also cut some rhubarb stalks for a rhubarb and chilli soup.
Peel and cut a variety of vegetables. Today I used potatoes, carrots, broccoli. onion, fennel, leek and cellery. Boiled for almost an hour, with salt and pepper and handfuls of freshly cut herbs. Mix with an electric mixer, making a smouth soup.
Eat hot with bread, I baked a foccacia sprinkled with olive oil and rock salt.
The soup is extra good served in a Blue Garden, on a Blue table.
