We eat so much meat during Christmas, it almost felt like a feast to have a very simple lunch of cod and salmon the other day. Terje's birthday is coming up, we will host a party on Sunday night to celebrate, and I plan to serve a fish soup. My preparations started with this fish lunch, the water I used to boil the cod and the salmon will give the soup the perfect flavour.
Our own potatoes, from The Blue Garden, are finished now. I used the last, small ones for this lunch, boiling them softly, then braising them in olive oil, sprinkling with Maldon salt.
Flatbrød, flat bread, is a must together with fish and potatoes. I have never tried to make flatbrød myself, but always look for the best when buying.
