(Marta's words when she found me cleaning the foxberries my dad has picked for us)
Several of you are unfamiliar with foxberries and ask what we use them for. The easiest answer is "everything". When I grew up my father used to pick "a ton". My mother cooked alot of it with sugar into a jam which we used on bread, with whiped cream for deserts, with meat just like I think Americans use applesauce - to get colour and taste. She also cooked some with apples to get another taste. Today I freeze all the berries plain. And use them with sugar for jam both for bread and for meat, or a make a great desert which we call "troll cream" - berries mixed with egg whites and alot of sugar. Trollcream taste heavenly on vafler. This autumn I am planning to play in the kitchen for new ways to use the fox berries, a foxberry and onion chutney, foxberry vinegar, foxberry syrup........do you have other suggestions?
