The cabin weekend was over, we had unpacked and Marta had gone to her Sunday night cheerleading practice. It was time to make dinner, and I realised I had forgotten to think of a menu, forgotten to shop for Sunday dinner groceries. I often make a pizza on such right back from the cabin nights, but somehow I was not in the mood for pizza.
It was when I unpacked the food I got the idea. One and a half onions, some dry bread..........it would make a soup :-) My smile broadened when I found a big potato, some garlic and a piece of white cheese in the fridge.
My soup made of "nothing" turned out to be gourmet delicious.
In a pot I sauteed in olive oil and butter, a few cloves of garliv, the one big potato and the one and a half onions, potato and onions cut into pieces. Sauteed for about 15 minutes. Added 5dl water, salt, pepper, coreander (I still have some left from the souk in Aleppo), more salt and more pepper. Boiled it all for 25 minutes.
While I waited I decided this soup made of "nothing" would be worth blogging about, so I prepared the usual corner in the kitchen with the usual white linen table runner.
I diced some dry bread and refreshed it in an iron pan, in olive oil.
Then I blended the soup, moved it into an ovenproof dish, added bread and cheese,
and grilled it for 10 minutes
Oh, la, la.........
